Sweet and Sour Fish

  • 500 gms fish fillets
  • 3 tblsp brown sugar
  • 1 tblsp cornflour
  • 2 tsp chives, chopped
  • 1/4 tsp dry, mustard
  • 8 snow peas or green beans
  • 250 gms tin pineapple pieces
  • 2 tblsp vinegar
  • 1 tblsp soy sauce
  • 1/4 cup cashew nuts


  1. Arrange fillets in baking dish. cover loosely with microwave wrap.
  2. Cook in microwave on high 6-7 mins, or until fish flakes easily. Drain fish well.
  3. In casserole dish, combine brown sugar, cornflour, chives and mustard. Stir in chopped beans or trimmed snow peas, drained pineapple juice, vinegar and soy sauce.
  4. Microwave on high for 2-3 mins or until thickened, stirring once or twice during cooking.
  5. Stir in pineapple pieces and cashews.
  6. Pour sauce over fish and cook uncovered on high fro 1-2 mins
  7. Serve with rice.
