Smoked Mackerel and Banana Kedgeree

Ingredients

  • 25 gms butter
  • 1 tsp mild curry powder
  • 150 gms basmati rice, cooked
  • 2 tbsp parsley, finely chopped
  • 4 bananas, peeled and sliced
  • 2 tbsp lemon juice
  • salt & freshly ground black pepper

Preparation

  1. Melt the butter in a larfe pan and fry the curry powder for 1 min.
  2. Stir in the remaining ingredients and cook for 2 or 3 min, stirring occasionally.
  3. Serve immediately.
