Marinated Calamari

  1. Clean any film from the calamari and cut into rings.
  2. Drop rings into rapidly boiling water. Reduce heat and simmer gently for 10- 15 minutes or until tender. Drain
  3. Mix 1/3 cup lemon juice with 1/3 cup oil. Add calamari and refrigerate overnight.
  4. Add 1 clove crushed garlic and 1 tbsp of chopped parsley. Stand for 2 a minimum of 2 hours
  5. Serve in the marinade
