Ingredients

200gms whitebait

2 eggs

1 tsp salt

2 tsp fresh breadcrumbs

Method

1- beat eggs well and mix in the other ingredients

2- drop spoonfuls of mixture into a pan with a thin layer of hot butter.

Fry like pancakes

3- serve hot with lemon juice squeezed over.
