Thai Shrimp Curry

Serves 4

 

Ingredients

1 onion minced

2 tsp minced fresh ginger

1 tsp minced garlic

1 tsp Asian fish sauce

1/4 tsp salt

2 chillies chopped

500gm shrimps

2 tsp vegetable oil

1 cup coconut milk

1/4 cup chopped fresh coriander

cooked rice

 

Method

Combine onion, ginger, garlic, fish sauce, salt, chillies and shrimp in medium bowl.

Let stand for 20 minutes.

Heat oil in large pan over high heat.

Add shrimp mixture; stir fry until opaque.

Stir in coconut milk; cook 2 minutes.

Sprinkle with coriander and serve with cooked rice.
