Smoked Fish Bake - serves 4

 

400g hot smoked fish, skinned and boned

2 tsp butter

1 large onion, finely chopped

2 green pepper, finely chopped

2 tomato, chopped

2 gherkins, sliced

2/3 cup mayonnaise

1/2 cup grated tasty cheese

1 cup crushed potato crisps or

1/2 cup bran flakes

 

Cut fish into cubes. Melt butter in a saucepan, add fish and onion and cook until onion is tender. Remove from heat. Combine chopped pepper, tomato, gherkin, mayonnaise and fish mixture. Place in a lightly greased ovenproof dish and bake at 180°C for 15 mins. Sprinkle with grated cheese and crushed potato crisps or bran flakes. Return to oven and cook for a further 5 mins until cheese has melted.

 

Variation Replace smoked fish cold smoked fish or fresh fish fillets.
