Salt and Pepper Squid


400gm squid rings

¼ cup flour

¼ cup cornflour

1 tsp salt

½ tsp Chinese 5 spice powder

1 tsp black pepper corns, crushed

½ cup cold water

3 cups oil for frying

 

Mix the flour, cornflour, salt, pepper and 5 spice powder. Lightly whisk in the water to make a slightly lumpy batter.

 

In a frypan heat the oil. Before frying add the squid rings to the batter and stir to coat.

 

Remove excess batter and drop the rings gently into the hot oil. Fry over high temp until golden brown (approx 2 mins)

 

 

Drain on a paper towel. Serve with lemon wedges
