Lemon Caper Fish (serves 4)

 

500gms fish

2 Tbsp. oil

50gms butter

1/2 cup lemon juice

1 Tbsp. capers, chopped

1/2 tsp sugar

1 Tbsp. fresh parsley, chopped

lemon slices and fresh herbs

 

Heat oil and butter in a large frying pan, add fish fillets and cook on both sides until lightly browned. Transfer fish to serving dish. Combine lemon juice, capers, sugar and parsley in a small jug. Pour into frying pan and simmer for 1 min. Pour over the fish fillets, garnish with lemon slices and fresh herbs and serve with a salad if desired.
