Smoked Mackerel and Banana Kedgeree    

 

25gm butter

1 tsp. mild curry powder

150gm basmati rice, cooked

200gms smoked mackerel fillet, skinned and flaked  

2 tbsp. freshly chopped parsley

4 bananas, peeled and sliced

2 tbsp. lemon juice

salt and freshly ground black pepper

 

Melt the butter in a large pan and fry the curry powder for 1 minute.

 

Stir in the remaining ingredients and cook for 2/3 minutes, stirring occasionally.

 

Serve immediately
