Ideas for the Green Olive paste
Spread a little on top of your fish, drizzling a little Verjuice or white wine
in the bottom of the dish and then bake.
If you have some trimmings (about 1 cup full), mince them in the food processor
add some green olive paste, finely chopped and sautéed shallots and a little
black pepper, allow to cool in the fridge before stirring through half a cup of
cream - now you can form little fish mousse balls and poach them in
stock.
Par cook some baby new potatoes, drain and slice. Layer the potato slices
over the top of your fish. Thin the green olive paste with a little extra virgin
olive oil or melted butter, spoon this over your potato topped fish and roast in
a hot oven for 8-10 minutes.
