Fish Mornay (serves 6)

 

600 / 700 g fish

1 tbsp white vinegar

25g butter

3 tbsp flour

pinch cayenne pepper

¾ cup milk

2 gherkins, sliced

1 tbsp lemon juice

1 tbsp mayonnaise

50 g cream or grated cheese

Parmesan cheese

breadcrumbs

 

Poach fish using 2 cups water, vinegar and 1 tsp salt. Remove fish and keep liquid. In a saucepan, melt butter, add 1 tsp salt, the flour and cayenne pepper. Mix. Gradually add milk and fish liquid while stirring and cook until thick. Remove from heat and add gherkins, lemon juice, mayonnaise and cream or grated cheese. Place fish in greased oven proof dish and pour over the sauce. Cover with dry breadcrumbs and sprinkle with grated parmesan cheese. Bake at 180ºC for 10 mins or until browned.
