Thai Shrimp Curry

Ingredients

  • 1 medium onion, minced
  • 2 tsp fresh ginger, minced
  • 1 tsp garlic, minced
  • 1 tsp asian fish sauce
  • 1/4 tsp salt
  • 2 chilles, chopped
  • 500 gms shrimps
  • 2 tsp vegetable oil
  • 1 cup coconut milk
  • 1/4 cup fresh criander, chopped
  • cooked rice

Preparation

  1. Combine onion, ginger, garlic, fish sauce, salt, chillies and shrimp in medium bowl.
  2. Let stand for 20 minutes.
  3. Heat oil in large pan over high heat.
  4. Add shrimp mixture; stir fry until opaque.
  5. Stir in coconut milk; cook 2 minutes.
  6. Sprinkle with coriander and serve with cooked rice.
