Pan fried fish with saffron and brie infused sauce

		            saffron(powder or threads)
		        
 
					        - 
		        	 		            	20 
		            	mls		             
		            white wine vinegar
		        
 
					        - 
		        	 		            	20  
		            	gms		             
		            butter
		        
 
					        - 
		        	 		            	500

		            cream

		            bay leaf

		            brie ( or could use smoked cheese)

Preparation
	    			        - Reduce vinegar, bay leaf and peppercorns by 2/3
  
					        - Add cream , brie and saffron and reduce further, till the sauce coats the back of a spoon, then strain
  
					        - Coat fish with flour and pan fry in a little oil.
