Fish Mornay

Ingredients

  • 600 gms fish
  • 1 tbsp white vinegar
  • 25 gms butter
  • 3 tbsp flour
  • pinch cayenne pepper
  • 3/4 cup milk
  • 2 gherkins, sliced
  • 1 tbsp lemon juice
  • 1 tbsp mayonnaise
  • 50 gms cream or grated cheese
  • parmesan cheese
  • Bread crumbs

Preparation

  1. Poach fish using 2 cups water, vinegar and 1 tsp salt. Remove fish and keep liquid.
  2. In a saucepan, melt butter, add 1 tsp salt, the flour and cayenne pepper. Mix
  3. Gradually add milk and the fish liquid while stirring and cook until thick.
  4. Remove from heat and add gherkins, lemon juice, mayonnaise and cream or grated cheese.
  5. Place fish in greased oven proof dish and pour over the sauce.
  6. Cover with dry breadcrumbs and sprinkle with grated parmesan cheese.
  7. Bake at 180 C for 10 mins or until browned.
