Fish Filo Roll

				Ingredients
	    			        - 
		        	 		            	1/2 
		            	cup		             
		            sour cream
		        
 
					        - 
		        	 		            	1 
		            	tbs		             
		            horseradish sauce
		        
 
					        - 
		        	 		            	1/2 
		            	rind		             
		            of 1 lemon
		        
 
					        - 
		        	 		            	1 1/2 
		            	tbs		             
		            chopped fresh dill ( 1tsp if dried)
		        
 
					        - 
		        	 		            	1/2 
		            	tsp		             
		            salt
		        
 
					        - 
		        	 		            	8 
		            	sheets		             
		            filo pastry
		        
 
					        - 
		        	 		            	2 
		            	tbs		             
		            olive oil
		        
 
					        - 
		        	 		            	500 
		            	gms		             
		            fish , sliced 1cm thick
		        
 
					        - 
		        	 		            	1/2  
		            	red		             
		            pepper
		        
 
					        - 
		        	 		            	1/2 
		            	green		             
		            pepper
		        
 
					        - 
		        	 		            	1- 2  
		            	sticks		             
		            celery , diced
		        
 
					        - 
		        	 		            	black 
		            			             
		            pepper
		        
 
					
Preparation
	    			        - Pre heat oven to 200 C
  
					        - Place sour cream, horseradish, lemon rind, dill and salt to taste into a bowl and mix well
  
					        - at 2 
sheets of filo pastry on a dry surface and brush lightly with oil, add 
another 2 sheets and oil again. Repeat until you have a stack of 8 
sheets.
  
					        - Spread the sour cream mixture over the pastry , leaving a 5cm strip of pastry visible at one of the short ends. 
  
					        - Arrange fish over the sour cream , then vegetables and black pepper to taste.
  
					        - Roll up like a sponge roll with in covered filo portion underneath.
  
					        - Place on a non- stick sprayed lined sponge tin. Brush outside of filo with oil.
  
					        - Bake 30- 40 mins until filo golden brown. Leave 10-15 mins before serving
